Bake Me Some Love: Whole wheat Honey Banana Muffins
Recipe:
- 3 1/2 cups whole wheat flour
- 2 teaspoons baking soda
- 1 teaspoon salt
- 2 tablespoons wheat germ (optional, i replaced it with instant oatmeal)
- 2/3 cup olive oil or 2/3 cup canola oil
- 1 cup honey
- 4 eggs
- 2 cups mashed ripe bananas
- 1/2 cup hot water
2. Beat oil and honey together; add eggs and beat well
3. Add mashed bananas and beat to combine. I like to keep the bananas a little chunky so you can taste more of the banana while having the muffin. I had more than 2 cups of mashed bananas btw, more like 3 cups or 3.5 cups. heh
4. Add dry ingredients to wet, alternating with hot water; mix well after each addition.
5. Spoon batter into 24 greased muffin cups (I used mini muffin cups so this recipe yielded more than 24 regular muffin sized muffins)
6. Bake at 180 degrees C for 15 - 30 minutes, or until muffins are golden brown and test done.
Remove from oven and cool on rack.
These muffins are AWESOME. Next time I'd add a wee bit more honey/olive oil to make it more moist. Wholesome breakfast food. So yums I had these muffins with milk for breakfast 3 mornings in a row. :D
Packed a box of them for mummy to bring to work to share with her colleague too, haha her colleague LOVES homemade goodies.
Made some cute tag that reads "World's Greatest Mom" for a sweet surprise for mummy when she opens to eat it at work! Heh
Hope you're loving my new blog layout as much as me! Spent half the day fiddling with the HTML till 3am in the morning and my head my swimming with HTML codes and i couldnt fall asleep till 6am and I woke up at 9plus to prepare for sunday service.
But very happy that my new blog layout is almost done. Gotta do some more work in the "Review section", lots of beauty products / services etc i've forgotten to link them up since forever. Lots of backlogs to blog about too! (:
